Fruit salad with cucumber

Fruit salad with cucumber is a bold and refreshing combination of flavors that surprises and delights. This recipe, inspired by European cuisine, combines the sweetness of apples, the citrus freshness of oranges, and the tanginess of grapes, while the unexpected addition of cucumber gives the dish a special crunch and lightness. Dressed with aromatic vanilla syrup and lemon zest, the salad acquires a refined aftertaste. Perfect for a summer treat, light snack or an unusual addition to a festive table. It's easy to prepare but looks impressive, and its taste offers a harmony of freshness and sweetness.

1
Fill a small pot with sugar and water in a 1:2 ratio. Place it on medium heat and heat until the sugar completely dissolves.
- Sugar: 50 g
2
Cut the vanilla pod in half lengthwise. Scrape out the seeds with a bold knife motion and add them along with the pod to the pot. Add the lemon zest, then bring the sugar syrup to a boil over high heat. Evaporate to the desired thickness, but remember that at a certain point, the syrup turns into caramel. Add the juice of half a lemon, remove from heat, and set aside to cool.
- Vanilla pod: 1 piece
- Lemon: 0.5 piece

The hardest part is behind. Now it's time to wash the fruits and vegetables, remove the grapes from the stem, and put them in a bowl. Also, add the peeled and diced cucumber.
- Green grapes: 200 g
- Cucumbers: 1 piece
4
Use a sharp knife to peel the oranges. Then, cut out the segments with a small knife. It's much easier than it seems. We need to get wedges without the white membrane. Add them to a bowl.
- Oranges: 2 pieces
5
If you think slicing apples will take a lot of time, prepare the other half of the lemon we used. You can sprinkle the sliced apples with lemon juice to prevent them from browning. I recommend adding them at the very end.
- Lemon: 0.5 piece
- Green apples: 2 pieces
6
The fruit salad should be dressed with completely cooled syrup and served immediately.
- Sugar: 50 g
