Olivier by the old recipe is a classic dish of Russian cuisine, tracing back to the original recipe of Lucien Olivier, a famous French chef who worked in Moscow in the 19th century. Initially, the salad included more refined ingredients but over time transformed into a popular treat. Today this version retains the spirit of tradition by combining boiled vegetables, chicken fillet, eggs, pickled cucumbers, and a tart apple that adds a zesty freshness. Dressed with delicate mayonnaise, it acquires a rich and balanced flavor while green peas add a light sweetness. This salad invariably adorns festive tables, bringing warmth and nostalgia. It is best served chilled for an even brighter and richer taste.
