Bulgur is a great base for a salad, in which, as opposed to cereal, you immediately want to put a lot of fresh stuff, including fresh cucumber.

Chop parsley, mint leaves, and onion finely. Soak bulgur for two hours in a mixture of oil and lemon juice — basically, bulgur can be slightly boiled, then mixed with oil and juice and allowed to cool.

Cut cucumbers into strips and sweet peppers into cubes. Make a sauce from yogurt, lemon zest, and feta, season with salt and pepper, and mix with vegetables, herbs, and bulgur.
