Apple salad with grape dressing is an elegant blend of freshness and gentle tartness typical of European cuisine. Preheat the oven to 180 degrees. Spread the nuts on a baking sheet and bake for 10 minutes until golden. Let cool.
- Peeled walnuts: 65 g

Put Concord grapes in a blender and blend until pureed. Strain through a sieve into a small bowl. Add walnut oil and lemon juice. Mix well, then season with salt and pepper.
- Concord grapes: 135 g

Fill a large bowl with ice water. Cut the lemons in half and squeeze the juice into the water, throwing in the zest as well.

Use a mandoline to slice the apples into thin strips and place them in lemon water.
