Cut off the bitter ends of the cucumbers and slice them into thick logs 3-4 cm long.

In a large bowl, whisk vinegar with sunflower oil, add salt and pepper. Add sugar, sesame seeds, thinly sliced hot pepper (there's a type of green pepper that burns but not catastrophically), finely chopped cilantro, cucumbers, and mix.
