Bring water to a boil, add wild rice, cover with a lid, and simmer for 45-55 minutes until cooked. Drain.

- Wild rice: 1 glass

Heat olive oil in a pan over medium heat. Add finely chopped onion and sauté until soft for 2-3 minutes. Add chopped bell pepper, minced garlic, and cumin. Sauté, stirring, for a minute. Add finely chopped dried apricots and orange juice. Season with salt and pepper and cook for 1-2 minutes until the apricots are soft.
