Pour dry beans into a bowl and cover with cold water. Add a pinch of baking soda, stir, and let sit for 12 hours.

Drain the beans and transfer them to a pot. Add water and include the halved carrot, halved celery, and a sprig of rosemary. Bring to a boil, cover, reduce heat, and simmer until tender. Drain and remove the vegetables and rosemary.
