Quinoa, Apple and Almond Salad

In a small pot, mix quinoa and water. Bring to a boil, reduce heat, cover, and cook for 15 minutes until tender and water is fully evaporated. Remove from heat and transfer quinoa to a bowl. Cool.

In a small bowl, mix honey, olive oil, lemon juice, and 0.5 teaspoons of salt. Whisk lightly.

- Lemon juice: 0.3 glass

Add peeled and diced apples, finely chopped celery, raisins, parsley, and crushed almonds to the quinoa. Mix well. Add the dressing and mix again. Season with salt and pepper.
