This Italian salad with cucumbers, grilled tomatoes, and feta is a true embodiment of freshness and vibrant flavors. Italian cuisine is known for its simple yet sophisticated combinations, and this salad is no exception. Crunchy cucumbers, pre-salted for enhanced flavor, are gently complemented by sweet tomatoes that have undergone a brief grilling process, giving them a light caramelized hue. Dijon mustard and red wine vinegar create a refined, slightly spicy dressing that perfectly ties all the ingredients together. Feta adds salty creaminess, making the dish balanced and rich. This salad is perfect as a light summer lunch or as a side dish to main courses. It carries the atmosphere of sunny Italy where fresh vegetables and natural flavors reign on the table.
