Peel the carrot, chop it, and marinate for 2 days. To prepare the marinade, mix water, vinegar, wine, mustard, and vegetable oil. Add salt, sugar, chopped parsley, thyme, bay leaf, crushed garlic, and pepper. Heat over fire, but do not boil.
