Za'aluk is a traditional Moroccan salad that embodies the spirit of Mediterranean cuisine. Its roots go back to ancient times when vegetables were stewed with aromatic spices, creating rich and deep flavor combinations. The dish is based on eggplants and zucchinis gently stewed with garlic, red pepper, and tomatoes, acquiring a velvety texture and rich taste. Sweet peppers sautéed in vegetable oil add a light caramel note, while lemon wedges refresh the flavor palette. Za'aluk is perfect as a standalone dish or side, pairing wonderfully with bread and meat dishes.
