Chicken heart salad is a hearty and nutritious dish that comes from Russian cuisine. It harmoniously combines tender chicken hearts sautéed in vegetable oil and infused with the aroma of soy sauce, with crispy fresh lettuce leaves and caramelized onions. Rinse chicken hearts in cold water, remove membranes and internal blood clots.
- Chicken hearts: 500 g

Place the hearts on a paper towel and blot them well. They should not be wet.

Pour vegetable oil into a heated pan, add the hearts, and fry for 10 minutes on each side.
- Vegetable oil: 50 ml
- Chicken hearts: 500 g

When the hearts are well fried, add soy sauce and simmer for 5 minutes, stirring occasionally. Season with salt and pepper to taste.
- Soy sauce: 150 ml
- Salt: to taste
- Ground black pepper: to taste

Remove the hearts with a slotted spoon and sauté the previously chopped onion in the remaining oily soy sauce. It's better to cut the onion into long thin half-rings.
- Onion: 1 head

Wash and dry the salad leaves. In a salad bowl, place the salad leaves, topped with fried hearts and onions. If desired, you can drizzle everything with the sauce obtained after frying the onions.
