Watermelon, Feta and Mint Salad

Watermelon salad with feta and mint is a refreshing summer dish with Greek roots. Greeks have long valued feta for its salty taste that pairs perfectly with the sweetness of watermelon. Mint adds lightness and invigorating freshness to the dish, while pine nuts contribute a delicate nutty note. The dressing of red wine vinegar and olive oil highlights the balance of flavors, making the salad both rich and airy. This salad is perfect for a hot summer day – it cools, refreshes, and energizes, and pairs wonderfully with white wine and light Mediterranean dishes.
