Boil the beef until tender in salted water with the addition of carrots and a whole unpeeled onion. Let the meat cool in the broth to keep it soft and juicy.
- Beef: 250 g
- Salt: to taste
- Red onion: 1 head
- Water: 150 ml
- Parsley: 1 bunch

Cut the cooked meat into small strips and transfer it to a salad bowl.

Slice the red sweet onion into thin feathers and then marinate it. To do this, place the onion in a bowl, add salt, sugar, vinegar, and pour cold water. Let it sit for at least 15 minutes, then drain the marinade. Gently squeeze the onion and transfer it to the salad bowl with the meat.
- Red onion: 1 head

Wash fresh parsley under running water, dry with paper towels, chop finely, and mix with the other ingredients.
