Red Cabbage Salad

Red cabbage doesn't have such a strong flavor as white cabbage. That's why it needs to be paired with red wine vinegar, black pepper, and olive oil.

Remove the outer leaves of the cabbage. Separate the heads into individual leaves and cut off the stems. Thinly slice the leaves, rinse in cold water, and dry well.

Bring salted water to a boil in a large pot, add the cabbage, pushing it down with a spoon so it is fully submerged. Boil for 5 minutes, then drain in a colander, let it dry well and cool slightly.
- Salt: to taste

In the meantime, whisk the vinegar with the oil, add salt and pepper. Place the cabbage in a salad bowl, drizzle with vinegar, and mix lightly. Serve warm or cold.
