Waldorf Salad with Shrimp

The recipe is taken from the book "Gordon Ramsay. Healthy Eating". "The classic Waldorf salad is a combination of crisp apples, grapes, celery and walnuts. And everything would be fine if it weren't for the huge amount of mayonnaise in it. In my salad, I add shrimp - a source of protein, and replace the caloric mayo with a much lighter Greek yogurt dressing. So make and eat the Waldorf salad. Celery pith is the more tender inner part of the stalks, which is often sold separately.

Prepare the dressing: in a bowl mix yogurt, mustard, vinegar, lemon juice, salt and pepper; whisk all ingredients. Taste and add salt and pepper if needed, as well as a bit of lemon juice if required.
- Greek yogurt: 100 g
- Dijon mustard: 1.5 teaspoon
- Apple cider vinegar: 1 teaspoon
- Lemon: 0.5 piece
- Sea salt: to taste
- Freshly ground black pepper: to taste

Roast walnuts in a dry pan over medium heat for 2-3 minutes until golden brown.
- Walnuts: 75 g

Place chopped lettuce leaves, shrimp, celery, apples, and grapes in a large bowl. Drizzle with dressing and gently mix. Taste for salt before serving.
- Romaine lettuce: 1 piece
- King Prawns: 200 g
- Celery stalk: 1 piece
- Granny Smith apples: 1 piece
- Green seedless grapes: 100 g
- Sea salt: to taste
