Thai Chicken Salad "Lab"

Lab is a national dish of Laos, but it is also very popular in Thailand, for example. It is made from different meats, fish, mushrooms - everything is quickly fried and seasoned with spicy sauces and lime juice. We made lab from minced chicken .

Prepare the necessary ingredients.

Heat half of the oil in a pot over the highest heat.
- Peanut butter: 40 ml

Fry half of the minced meat, chopped lemongrass, and chili. Stir constantly and break up clumps, frying for 2-3 minutes.
- Minced chicken: 500 g
- Lemon grass: 1 stem
- Green chili pepper: 1 piece

Continuously stir and break up clumps, frying for 2-3 minutes. Then transfer the cooked meat to a clean ovenproof dish and repeat with the remaining oil, minced meat, lemongrass, and chili. If frying a large amount of meat at once, it will release a lot of moisture and start to stew.
- Peanut butter: 40 ml

Mix lime zest and juice, fish sauce, and sweet chili.
- Lime: 2 pieces
- Fish sauce: 1 tablespoon
- Sweet chili sauce: 1 tablespoon

Pour this sauce over the meat.

- Sweet chili sauce: 1 tablespoon

Cut the onion into strips.
- Red onion: 1 head

Chop the cilantro.
- Coriander: 30 g

Tear off the mint leaves if they are large, and chop them as well.
- Fresh mint: 15 g
