Sift the flour, pile it on the table, and make a well in the center. In mineral sparkling water, add yeast, sugar, a little flour, and mix thoroughly. Let it sit for 20-30 minutes.

Form a ball from the resulting dough, cover it with a damp cloth and let it rest for 30 minutes at room temperature. Then divide the dough into portions of 150-200 g and leave for another hour. The dough can be frozen.
