Bring water to a boil in a large pot. Add 1 tablespoon of salt and spinach. Cook for 1 minute. Use a slotted spoon to remove the spinach (leave the water for pasta) and place it in a bowl of cold water. Drain and squeeze dry. Chop coarsely.

Bring back to a boil the water in which the spinach was cooked. Meanwhile, if using garlic, grind it in a food processor with steel blades. Add the cottage cheese and mix until it reaches a very soft consistency. Add the spinach and milk and mix again. Add nutmeg and salt to taste. Place the mixture in a shallow bowl. Put the pasta in boiling water, stirring to prevent sticking. Cook for about 10 minutes until the pasta is soft. Drain the water.
- Garlic: 2 cloves

- Milk: 0.3 glass

Put the pasta in a bowl with spinach sauce and mix well. Sprinkle with Parmesan and mix again. Serve the dish hot.
