In a large pot, bring salted water to a boil. Add the pasta; stir to prevent sticking. Cook the pasta until soft, about 10 minutes. Drain well.

Meanwhile, peel the sweet potato and cut it into small cubes. In a large saucepan or skillet, heat the oil over medium or low heat. Add the sweet potato and cook for 8 minutes.

- Extra virgin olive oil: 1.5 tablespoon

Add shallots and thyme, cover with a lid and cook for 4 minutes. Add cherry tomatoes, cover again and cook for 2 minutes. Add the cooked pasta, broth, salt, and pepper. Mix well and serve hot.
