Macaroni and cheese waffles are an unusual yet brilliant combination of two classic dishes: pasta and crispy waffles. This Italian-inspired recipe transforms familiar macaroni and cheese into a golden, aromatic snack with a rich cheddar flavor and a tender texture. The preparation process includes making a creamy cheese sauce, cooling the pasta mixture, and turning it into waffles with a crispy crust. The dish becomes particularly interesting due to the contrast of textures: the delicate filling of melted cheese and soft macaroni inside is framed by a crunchy caramelized crust. Place the pasta in a large pot, cover with warm water so that it is submerged by 5 cm, add salt and bring to a boil over high heat, stirring occasionally. After boiling, continue cooking for about 6 minutes until the pasta is soft. Drain the water.
- Pasta: 450 g

Meanwhile, heat the butter in a large pot over medium heat until melted. Add the flour and continue cooking, stirring, until the mixture turns golden. Slowly whisk in the milk, hot sauce, and mustard. Bring to a boil, reduce the heat, and stir in 300g of cheese. If the desired consistency is achieved, transfer the mixture to a blender and blend on high speed until smooth.
- Butter: 2 tablespoons
- Wheat flour: 1 tablespoon
- Milk: 1 glass
- Hot Thai Sauce: to taste
- Mustard: 1 teaspoon
- Cheddar cheese: 550 g

When the pasta is ready, mix it with cheese sauce, place it on a pre-greased baking sheet, flatten it out, and put it in the refrigerator for 30 minutes.
- Butter: 2 tablespoons

Preheat the waffle maker. Carefully cut the pasta into 8 equal squares.

Using a wide spatula, carefully place 1 square on the cutting board, sprinkle with some cheese, and place the second square on top of the cheese to make a sandwich.
- Cheddar cheese: 550 g

Place the sandwich in the waffle maker and bake for 6 minutes until golden brown on both sides and the cheese is crispy. Serve on a plate and garnish with maple syrup and hot sauce.
