Mix the flour with 3/4 teaspoon of salt and pour it onto the table, leaving a well in the center. Combine the yeast with 120 ml of warm water, mix well and pour it into the well. Gradually knead the dough until it becomes soft and elastic. Shape into a ball, make a cross cut on top, place in a bowl, cover with plastic wrap and let rise for 3 hours until doubled in size.

- Fresh yeast: 15 g

Finely chop the garlic and mushrooms, and sauté in olive oil over low heat, stirring constantly, for about 5 minutes. Season with salt and pepper, add parsley, and simmer on low heat for 30 minutes.

Preheat the oven to 220 degrees. Divide the dough in half and roll it into an even circle 5 mm thick, with the edges thicker than the center. Add the filling and place it in the oven for 20 minutes.
