Gluten-free quinoa pizza is a modern take on classic Italian baking designed for those seeking healthy eating. Quinoa, known for its nutritional properties and lightness, replaces traditional dough here, creating an unusual yet surprisingly tasty crust with light nutty notes. The pizza retains its crispy crust and rich aroma complemented by tomato sauce, aromatic herbs, mushrooms, Parma ham, and tender mozzarella. Its flavor is a harmony of tenderness and richness while the texture allows enjoyment of each bite without heaviness. An ideal option for those wanting to combine Italian traditions with modern gastronomic philosophy without compromising taste and quality.

1
Preheat the oven to 210°C.
2
Soak quinoa in a bowl of water overnight or for 8 hours. Then rinse under running water using a very fine sieve. Drain the water. If quinoa is not rinsed, it will taste bitter.
- Quinoa: 0.8 glass
- Water: 0.3 glass
3
Transfer quinoa to a blender bowl, add salt and 1/4 cup of water, and blend for about 2 minutes until it becomes a thin paste. Add baking powder and blend for 3 seconds.
- Quinoa: 0.8 glass
- Salt: 0.3 teaspoon
- Water: 0.3 glass
- Baking powder: 1 teaspoon
4
Line the mold with parchment paper, grease with olive oil. Pour in the 'dough' and bake for 15 minutes.
- Olive oil: 1 teaspoon
5
Then we flip the pizza crust and put it in the oven for another 5 minutes to make the edges crispy. The thinner the dough, the tastier the pizza.
6
Slice the tomatoes thinly, and also slice the mushrooms thinly. Cut the Parma ham (prosciutto) or ham very thin.
- Tomatoes: 0.5 piece
- Champignons: 2 pieces
- Parma ham: 80 g
7
Take the crust out of the oven and brush it with tomato sauce. Please don't ruin the pizza with ketchup; instead, make sauce from a large ripe tomato.
- Tomato sauce for pizza: 3 tablespoons
8
Cut the mozzarella cheese into circles like sausage.
- Mozzarella Cheese for Pizza: 60 g
9
Place mushrooms, ham, tomatoes, and mozzarella on top of the sauce. Season with dried Provençal herbs or fresh basil and thyme. Send the pizza to the oven for about 10 minutes until a golden crust forms.
- Champignons: 2 pieces
- Parma ham: 80 g
- Tomatoes: 0.5 piece
- Mozzarella Cheese for Pizza: 60 g
- Provencal herbs: 0.5 teaspoon
- Tomatoes: 0.5 piece
10
We cut the pizza into 4 pieces and serve it hot.
