We are preparing gnocchi. Grate Parmesan on a fine grater (not all of it, leave a little for frying) and the peel of about half a lemon. It's important to use only the peel, as we don't need extra acidity in the dish.
- Parmesan cheese: 100 g

We combine ricotta with parmesan, lemon zest, and nutmeg. Add a pinch of salt and pepper. Mix thoroughly.
- Ricotta cheese: 1 kg

Now we make the balls. Do not press them too hard; they should not be too dense. Generously sprinkle the finished balls with semolina. Place in the refrigerator for 6-8 hours.
- Semolina: 1 glass

Fry the sage leaves in a mixture of olive and butter. Add the gnocchi and carefully fry (you can add a little warm water). Grate the remaining parmesan and squeeze the juice of half a lemon. After a minute, remove from heat.

We place the balls in portion plates and pour sauce from the pan on top.
