Buckwheat noodles with squid, mushrooms and zest

Buckwheat noodles with squid, mushrooms, and mandarin zest is an exquisite dish that combines delicate sea freshness, rich woody notes of mushrooms, and a bright citrus accent. Originating from Asia, buckwheat noodles take on a new character here by merging with European culinary traditions. We put the mushrooms (honey agarics) in the pan and sauté them well.
- Mushrooms: 160 g

We chop the garlic and the zest of two mandarins. If someone in the family doesn't like the zest, cut it coarsely so they can remove it. But it still needs to be added to the dish for a mandarin flavor.
- Garlic: 2 cloves

We cut the mandarins ourselves, we can put two in the dish. Or we can just squeeze juice from one and place the other with pulp. In my opinion, both with pulp are more interesting.

We cut the thawed squid fillet.

When the mushrooms are ready, we pour everything into the pan and mix it with the mushrooms. We add soy sauce, vegetable oil, salt to taste and fry this beauty until done over medium-high heat (the squid should cook in the mushroom juice, and the juice should evaporate due to temperature; in the last minutes there should be almost no liquid left; the dish should be frying, not stewing).

- Soy sauce: 100 ml
- Vegetable oil: 50 ml
- Salt: to taste

We boil the noodles for about 10 minutes in a pot, uncovered, over medium heat. For two servings, I boil half a package (see the photo).
- Soba noodles: 50 g

Once the noodles are cooked, drain the water, add them to the pan and mix with the other ingredients. Add a tablespoon of honey and sauté for another 2 minutes.
