Boil the spaghetti in salted water, slightly undercooked.

Drain the water, leaving 3/4 cup (180 ml) of liquid for sauce preparation (I recommend leaving the water in the pot to prevent the spaghetti from sticking or adding a little butter).

Take a medium pot, add 120 ml (half a cup) of half-fat cream and 1/4 teaspoon of salt. Bring to a boil over medium heat.

In a small bowl, carefully mix 1 teaspoon of potato starch with the remaining cream and add this mixture to the sauce (do not pour all the starch at once, but gradually add it to avoid lumps).

Continue to boil, stirring constantly, until the sauce thickens. Then pour in the prepared water and mix.

Add a little ground black pepper to taste and continue to cook the sauce, stirring constantly, for one minute.

Remove the pot from the heat, grate the cheese on a fine grater, and add it to the hot sauce. Stir until the cheese melts.
