Tashir pizza

4 servings

120 minutes

Tashir pizza is the embodiment of classic Italian cuisine with a touch of home comfort. Its dough, airy and slightly crispy, is made using traditional methods with milk and dry yeast, giving it a special softness. The filling is a true celebration of flavors: fresh vegetables, aromatic capers, spicy salami, and tender parmesan. The sauce made from tomato paste and mayonnaise adds richness and harmony. This pizza is perfect for family dinners and warm gatherings with friends when you want to feel the atmosphere of an Italian trattoria without leaving home. Baked at high temperatures, it makes the edges pleasantly crispy and the cheese stretchy and golden. Tashir pizza is not just a dish but a small gastronomic celebration.

Cooking steps
  • 1

Heat the milk to about 40 degrees. Add dry yeast to the milk (preferably from a trusted manufacturer), mix well, and let it sit for 30 minutes. After this time, the milk should foam.

    Required ingredients:
    1. Milk300 ml
    2. Dry yeast12 g
  • 2

Flour must be sifted to 'aerate' it.

    Required ingredients:
    1. Wheat flour500 g
  • 3

Make a well in the center, pour in milk and crack an egg. Add sugar, salt, and butter.

    Required ingredients:
    1. Milk300 ml
    2. Chicken egg1 piece
    3. Sugar1 teaspoon
    4. Vegetable oil2 tablespoons
  • 4

Knead the dough until it has a soft consistency and slightly sticks to your hands. Cover the bowl with plastic wrap and leave the dough in a warm place for an hour to an hour and a half (I usually place it near the radiator).

  • 5

When the dough triples in size, it is ready. At this stage, it's time to turn on the oven. It should be preheated to 250 degrees (the higher the temperature, the fluffier the dough will be).

  • 6

Prepare the filling. This time I have: pepper, tomatoes, dill, onion, salami, capers, and parmesan cheese. Another filling option is here, but there are many options — choose according to your taste.

  • 7

Grease the baking tray with oil and sprinkle with flour. Shape the dough into a large flatbread (if the oven is small, it will make two flatbreads and thus two pizzas). Do not press the edges to avoid releasing air. Brush the dough with sauce: 1 teaspoon of tomato paste mixed with 1 tablespoon of mayonnaise.

    Required ingredients:
    1. Vegetable oil2 tablespoons
    2. Wheat flour500 g
  • 8

Layer the filling, remembering to add a little grated cheese to each.

  • 9

At the end, generously sprinkle everything with grated cheese. Bake the pizza for 6 minutes at 250 degrees on the top shelf of the oven (the top+bottom mode should be on).
