Prepare the dough. Heat the milk in a pot. Remove from heat. Add the crumbled yeast. Pour the milk into the food processor bowl, add olive oil and water. Turn on the processor for 15 seconds. Sift the flour with salt, add it and sugar to the processor bowl. Mix until the dough stops sticking to the bowl walls.
- Milk: 100 ml
- Fresh yeast: 13 g
- Olive oil: 20 ml
- Mineral water: 100 ml
- Wheat flour: 350 g
- Salt: pinch
- Sugar: 50 g

Roll the dough into a ball and place it in a bowl. Cover with a cloth. Let the dough rise at room temperature. It should double in size.

Preheat the oven to 240 degrees. Roll out the dough on a floured board into a flatbread about 40 cm in diameter. Grease the baking tray with oil. Place the flatbread on the tray and evenly prick it with a fork.
- Wheat flour: 350 g
- Olive oil: 20 ml

Prepare the filling. Cut the mozzarella into thick slices. Arrange them in a rosette 2 cm from the edges of the flatbread. Bake until done.
- Mozzarella cheese: 250 g

Chop the chocolate and melt it in a water bath. Remove from heat and mix in the mascarpone. Whip it. Take the pizza out of the oven and spread a layer of chocolate with mascarpone, leaving 1 cm from the edges. Sprinkle with chopped nuts and orange zest.
- Dark chocolate 70%: 200 g
- Mascarpone cheese: 150 g
- Crushed pistachios: 2 tablespoons
