Crustless pizza is an original interpretation of Italian classic, where eggs and vegetables serve as the base. This dish perfectly combines the tenderness of baked eggs, the juiciness of bell peppers and tomatoes, and the rich flavor of melted hard cheese. Such pizza is suitable for a light dinner or a healthy breakfast, especially for those looking to minimize flour intake. The dish has gained popularity among health enthusiasts as it contains a rich array of vitamins and proteins while remaining appetizing and aromatic. Baking in a combined grill and microwave mode gives the vegetables a light caramelization, enhancing their natural sweetness. The simplicity of preparation makes this pizza an excellent solution for a quick treat, and its vibrant taste will surely delight fans of unusual culinary solutions.

1
Clean and finely chop the onion. Remove the seeds from the bell pepper and cut it into thin half-rings.
- Onion: 2 heads
- Red sweet pepper: 2 pieces
2
Fry the onion in vegetable oil until almost fully cooked, then add the pepper and fry for a few minutes until the pepper softens.
- Vegetable oil: 3 tablespoons
- Onion: 2 heads
- Red sweet pepper: 2 pieces
3
Place the fried vegetables in a baking dish. For this amount of ingredients, I recommend using a baking dish with a diameter of at least 23-25 cm, so the layer of vegetables is not too thick; otherwise, it will turn into a casserole instead of a pizza.
4
Beat the eggs lightly, add salt. Pour the eggs over the vegetables.
- Chicken egg: 5 piece
5
Slice the tomatoes into 5-7 mm thick rounds and spread them over the entire surface of the pizza. Sprinkle the tomatoes with grated cheese or place cheese slices on top of the tomatoes.
- Tomatoes: 2 pieces
- Hard cheese: 75 g
6
Place the pizza dish on the high grill rack and bake for 20 minutes in a combination of grill and microwave mode.
