Preheat the oven to 180 degrees and place a pizza pan or baking sheet inside to heat up.

Heat a pan with 1 tablespoon of olive oil. Add fennel seeds and sausage meat. Mix well and fry over medium heat until golden brown, about 8-10 minutes, breaking up the meat.

Increase the temperature to 230 degrees.
