Boil the beans in boiling water for 3 minutes. Drain, slightly cool, and peel off the tough outer skin.
- Peeled fava beans: 450 g

Heat olive oil in a deep skillet over medium heat. Add finely chopped onion, minced garlic, and pepper flakes. Sauté for about 6 minutes. Remove the skin from the sausages and add the minced meat to the skillet. Break it up with a wooden spoon and fry until browned for about 3 minutes. Add wine and cook for another minute. Then add tomatoes and beans. Simmer for about 5 minutes. Season with salt and pepper.

- Dry white wine: 0.3 glass
- Tomatoes in their own juice: 300 g

Meanwhile, boil the pasta in a large pot of salted boiling water until cooked. Drain, reserving 0.5 cup of pasta water, and return the pasta to the pot.
- Fettuccine egg pasta: 340 g

Add the sauce to the pasta and mix well. Heat for about 2 minutes, adding water from the pasta. Stir in 2 tablespoons of grated cheese and transfer to a serving bowl. Sprinkle with the remaining cheese and serve.
