Pasta with chorizo and tomatoes is a delicious dish inspired by Italian cuisine but with a spicy Spanish twist. Its roots trace back to Mediterranean culinary traditions where pasta is always paired with aromatic sauces and meat additions. Here, chorizo plays the main role—a spicy sausage that gives the dish a rich, slightly smoky flavor. Tomatoes add freshness and a hint of acidity, while Gruyère cheese forms a golden, crispy crust when baked. This dish is perfect for a cozy family dinner or festive gathering. It delights with its harmonious blend of flavors and textures—tender pasta, gooey cheese, juicy tomatoes, and spicy chorizo. Serve hot so each bite is infused with aromas and melted cheese.
