    Peel and dice a medium-sized onion. Crush a garlic clove with the flat side of a knife and chop it coarsely. Heat oil in a pan, sauté the onion and garlic until translucent. Do not let them turn golden, or they will taste bitter.

    Add concentrated tomato paste, sugar, salt, and all spices. Choose a quality paste that is 100% natural and starch-free. It should not be unnaturally bright red or brown and burnt. The higher the quality of the paste, the better the sauce will taste. Basil and oregano can be fresh or dried; you can also use a ready-made mix of Italian dried herbs.

If you want a richer color, add a bit of ground sweet paprika.
