Spaghetti of baby courgettes with meatballs

The recipe is taken from the book "Gordon Ramsay. Health food". "In the UK we call spaghetti made from courgettes, and in the US we call them zoodles. Great names for a tasty vegetable " pasta" that is becoming increasingly popular on both sides of the Atlantic. Courgetti with meatballs is as hearty and comforting as a plate of spaghetti. It's a brilliant family dish, as it will up your vegetable intake without sacrificing flavour or texture. Courgetti are also great with pesto and other classic pasta sauces.

Turn 4 zucchinis into spaghetti using a spiralizer, vegetable peeler, or mandoline.
- Zucchini: 4 pieces

Put turkey mince in a bowl, add chopped onion (1 piece), garlic (2 cloves), Worcestershire sauce, beaten egg, salt, and pepper. Mix thoroughly.
- Ground turkey: 500 g
- Onion: 2 pieces
- Garlic: 4 cloves
- Worcestershire sauce: 2 teaspoons
- Chicken egg: 1 piece
- Sea salt: to taste
- Freshly ground black pepper: to taste

With wet hands, shape 20 meatballs from the mixture and place them on a plate. Cover with plastic wrap and refrigerate for 30 minutes.

Prepare tomato sauce: place a large skillet over medium heat and pour in some olive oil. When the oil is hot, add the onion and sauté until soft for 5–6 minutes, then add garlic and sauté for another minute.

Add tomato puree and simmer for another 2 minutes, then add chopped tomatoes, oregano, balsamic vinegar, salt, and pepper. Mix everything and simmer for 10 minutes until the sauce thickens slightly.
- Tomato puree: 1 tablespoon
- Canned tomatoes: 800 g
- Dried oregano: 0.5 teaspoon
- Balsamic vinegar: 0.5 teaspoon
- Sea salt: to taste
- Freshly ground black pepper: to taste

To prepare meatballs, place a skillet over medium heat and pour in oil. Fry the meatballs in hot oil in batches, turning frequently until browned on all sides. Transfer to a skillet with tomato sauce and simmer for another 10 minutes, turning occasionally until the meatballs are fully cooked (if the sauce becomes too thick, add 50-100 ml of water).

Add another teaspoon of oil to the pan where the meatballs were fried and sauté the zucchini spaghetti over medium heat, stirring occasionally. After 3-5 minutes, the spaghetti will become slightly softer.

Place the courgettes in serving bowls and top with meatballs. Optionally sprinkle with parmesan.
