Mix flour and salt in a mixing bowl. Separately mix water, sugar, and yeast and let it sit for a few minutes until small bubbles form. Add olive oil and mix. Start mixing the flour at low speed, gradually adding the oil-water mixture to the bowl. Knead until the dough is firm and homogeneous.

Divide the dough into four balls. Grease the balls with olive oil and place them on parchment paper. Cover with plastic wrap and let rise in a warm place for about 2 hours.

Dust the board and rolling pin with flour. Roll out the dough. The outer part of the flatbread should be slightly thicker than the center.

Preheat the oven to 180 degrees. Line a sheet with parchment paper or lightly grease it with olive oil. Spread the dough on the parchment paper or grease the pan. Brush the dough with a small amount of olive oil and rub it over the surface to coat evenly.
