Wash young potatoes well, place them in a pot with plenty of water, add salt to taste, and boil over medium heat until half-cooked. Strain.

In a thick-bottomed pan, heat fat or oil, add potatoes, and fry, stirring, over high heat until the potatoes are browned on each side.
