Cut the turkey fillet in half lengthwise, cover it with film, and pound it well with a mallet.

Roll the fillet into a roulade and carefully wrap it in ham. To maintain the shape, gently secure the dish with a skewer or string.

Pour in dry wine, add melted butter and thyme sprigs. Place in a preheated oven for 15 minutes.

At the same time, pour boiling water over the washed raisins and let them sit for 2-3 minutes. Carefully drain the water, rinse the raisins again, and let them dry a bit.

Mix dried raisins with white wine vinegar and olive oil.

Chop the walnuts coarsely and add them to the mixture with olive oil and raisins. Mix everything well.
