Vegetarian wheat cutlets are a simple and nutritious dish of Russian cuisine that reflects the traditions of lean eating. They are made from thick wheat porridge, which acquires a rich aroma and spicy taste thanks to spices and garlic. Fried to a golden crust, they are tender inside and crispy outside. These cutlets pair well with vegetable sides or fresh salads and can also serve as a standalone dish. They can be served hot, enjoying their appetizing aroma and heartiness. This is an excellent solution for those looking for a simple alternative to meat cutlets, rich in plant proteins and beneficial nutrients.

Boil the wheat groats until they reach a thick consistency (add a little water while boiling). Then let it sit for a bit to absorb the excess moisture.
- Wheat groats: 300 g

Add salt, pepper, and grate garlic on a fine grater. The amount of spices depends on your taste, but I recommend adding more spices, as wheat porridge has a very mild flavor!
- Sea salt: 5 g
- Ground black pepper: 2 g
- Garlic: 5 clove

After that, we shape small patties up to 2 cm thick by hand (this amount makes about 18 pieces), lightly coat them in semolina or breadcrumbs, and fry in oil.
- Semolina: 50 g
- Vegetable oil: 30 ml

Since the cutlets are essentially ready, we fry them for just a couple of minutes on each side until a light golden crust forms. It's best to serve them hot, either with a side dish or as a standalone meal.
