We wash the fish, cut off the fins, tail, and head. We make a cut along the belly, remove the entrails and spine.
- Mackerel: 1 piece

Finely chop the greens and mix them with salt. Place the greens on one side of the fish's inner part and cover it with the other side.
- Parsley: 1 bunch
- Green onions: 1 bunch
- Salt: to taste

We pin the fish with toothpicks to keep the greens from ending up in the pan.

From the outside, we coat the fish with lemon juice on both sides and rub it with salt and seasoning.
