It is based on fresh broccoli, potatoes, and onions enriched with cream and aromatic chicken broth. The history of such soups goes back to the tradition of creating soft, velvety pureed soups in French restaurants where the delicacy of taste is valued. This soup has a pleasant creamy texture and a light spiciness that can be enhanced by adding greens, crunchy croutons, or smoked meat.
