Mushroom pie is a classic Italian dish that combines soft, airy dough with a rich filling of wild mushrooms and caramelized onions. Preparing the dough: I made the dough in a bread maker. We place the ingredients in the bread baking pan: first pour in the milk, add softened butter, then sprinkle in the yeast, sifted flour, salt (1.5 tsp), and sugar (1.5 tbsp). We place the bread baking pan in the machine and plug it in. Select the Basic program and Dough mode. The display should show the time - 2:20.
- Milk: 310 ml
- Butter: 30 g
- Dry yeast: 1 teaspoon
- Wheat flour: 500 g
- Salt: 1.5 teaspoon
- Sugar: 1.5 teaspoon

Preparing the filling: While the bread maker kneads the dough, we start preparing the filling. We process fresh forest mushrooms, boil them in salted water for 15 minutes after boiling, then drain and repeat this two more times. We drain the water and place them in a colander. We sauté sliced onions in vegetable oil until transparent and add the mushrooms. We season with salt and pepper to taste. We fry everything until golden brown. Let it cool.
- Fresh forest mushrooms: 1500 g
- Onion: 1 head
- Vegetable oil: 3 tablespoons
- Salt: 1.5 teaspoon
- Mix of peppers: to taste

We make the pie ourselves: When the dough is ready, we divide it into three parts: the first two are of equal size, and the third is smaller (for decorative elements).

Roll out the first part into a rectangle 1-1.5 cm thick, place it on a baking sheet lined with oiled parchment paper. Put it in a warm place and let it rise a bit. Roll out the second layer in the same shape and let it rise as well.

Carefully spread the filling on the first layer and cover it with the second. Join and pinch the edges. Decorate with figures from the third part of the dough. Make several holes with a fork for steam to escape and place in a preheated oven. Bake the pie at 200°C for 30-40 minutes until a golden crust forms.

Once the pie is ready, place it on parchment and cover it with a cloth napkin. Let it sit for 15-20 minutes to soften the crust.
