Wash the rabbit cleaned of entrails and cut it into pieces. Dredge the pieces in flour and fry them in a high-sided pan with olive oil (about 3 tablespoons) until all pieces are evenly browned (on high heat, about 7-8 minutes). Then add a glass of white wine and let it evaporate.
- Rabbit: 1.6 kg
- Wheat flour: to taste

In a separate pan, sauté finely chopped carrots, celery, onion, and garlic. Add the sauté to the rabbit, mix evenly, add broth (so the rabbit is almost submerged in liquid), reduce heat, and simmer covered until done (about 45 minutes). Season with salt and pepper to taste. The main thing: do not let the rabbit dry out. Check that the heat is low and there is always liquid in the pan. If it gets too low, you can gradually add hot water.

While the rabbit is cooking, peel and core the pears, then cut them into 4 wedges. Next, immerse them in boiling water with the juice of half a lemon and 2 tablespoons of sugar for 4 minutes.
