Cut the meat along the fibers, leaving 1 cm uncut at the edge, unfold it, and pound it to a thickness of 0.5 cm, then salt and pepper it.

Remove the stems from the basil and mint.

Spread the greens over the meat and roll it up.

Place on the rack in the baking tray, seam side down, drizzle with vegetable oil, and sprinkle with salt.

Pour 2-3 cups of water into the baking tray and place it in a preheated oven at 160°C for 2 hours. Add water to the tray as needed.

Blanch the peaches in boiling water, then in cold water, peel them, remove the pits, and cut the flesh into small cubes.

Peel the pears and remove the cores, cut them in half lengthwise, large ones into four pieces, place them in a saucepan with peaches, pour in wine, add sugar, white pepper, and set over medium heat.

Periodically turning the pears (best done with tongs or a very thin spatula), cook the sauce until thickened, for 15-20 minutes.
