Low-calorie beef stroganoff

Beef Stroganoff is a famous dish of Russian cuisine that gained worldwide popularity due to its rich flavor and tender texture. This recipe presents a lighter version with reduced calories. Instead of the classic creamy sauce, low-fat sour cream is used, and minimal oil makes the dish less fatty. Juicy beef tenderloin sliced into thin strips and sautéed with onions develops an appetizing golden crust. Aromatic spices and herbs enhance the flavor, making it rich yet light. This version of Beef Stroganoff pairs wonderfully with rice, potatoes, or even vegetables, creating a harmonious and balanced meal. A great choice for those who want to enjoy classic taste while being mindful of their calorie intake.

1
Clean the onion (quite large), chop it finely, and put it in a hot pan with vegetable oil. Fry until translucent.
- Onion: 1 piece
- Vegetable oil: 1 tablespoon
2
We cut the meat into thin long pieces (any cut will do — originally beef, but other options are possible; membranes should be carefully trimmed with a sharp knife; in general, knives should be sharp!), coat it in flour (according to the standard recipe, the flour should be sautéed in butter, but we won't do that since our goal is to reduce calories, so we ruthlessly remove both butter and excess flour!), into which we have previously added salt, pepper, and herb seasonings without flavor enhancers (to taste). We shake off the excess flour by placing the meat in a colander.
- Beef tenderloin: 600 g
- Wheat flour: 3 tablespoons
- Salt: to taste
- Ground black pepper: to taste
- Seasonings: to taste
3
Place the meat in a pan with onions and quickly fry on all sides to 'seal'.
- Beef tenderloin: 600 g
4
Add sour cream, cover with a lid, and simmer on low heat for 20-30 minutes, stirring occasionally (note: it can burn quite well!), until the sauce thickens and turns a grayish-cream color.
- Sour cream 15%: 200 g

Actually, that's all. Let it sit for 10 minutes to rest – and enjoy your meal. It can be served with fried potatoes/rice/pasta, but it's best on its own!
