Schnitzel made from homemade minced meat with egg is a dish rooted in German cuisine, known for its simplicity and heartiness. In the classic version, schnitzel is made from a whole piece of meat, but this recipe offers a more tender variant – from minced meat. A mixture of pork and beef, complemented by onions, spices, and aromatic herbs, turns into juicy patties with a golden crust. The feature of this dish is its filling: melted cheese and baked egg that give the schnitzel softness and rich flavor. It is cooked in the oven, making it healthier, and its shape resembles a boat that conveniently holds the filling. Such schnitzel can be served with greens and a light side dish; it pairs wonderfully with mashed potatoes or fresh vegetables.

1
We break the loaf and soak it in milk.
- White bread: 150 g
- Milk: 120 ml
2
We cut the meat into medium pieces, clean 2 cloves of garlic and an onion.
- Pork: 400 g
- Beef: 500 g
- Onion: 2 pieces
3
We pass meat, onion, and bread through the meat grinder.
4
We mix the minced meat by hand, add spices, an egg, and a little salt.
- Ground black pepper: 0.5 teaspoon
- Khmeli-suneli: 1 teaspoon
- Chicken egg: 6 pieces
5
Grease the frying pan with vegetable oil.
6
We take a full palm of minced meat, lightly beat it in our hands, and form a schnitzel. The schnitzel shrinks after baking, so I recommend making it larger!
7
We shape the schnitzels like boats and make a hollow in the middle for cheese and egg.
8
Pour some grated cheese into the indentation and place it in a hot oven at 200 degrees for 20 minutes.
- Hard cheese: 150 g
9
After 20 minutes, pour an egg into the indentation and return to the oven at 180 degrees for another 15-20 minutes.
- Chicken egg: 6 pieces
