Finger Cutlets

'Fingers' cutlets are a refined and appetizing dish of Russian cuisine that combines the rich taste of minced meat, nuts, and cheese. Their name speaks for itself—miniature, golden-brown, and incredibly juicy cutlets that are easy to pick up with your fingers while enjoying their tender texture and rich aroma. A light crispy crust formed by breadcrumbs and butter adds a special zest. Walnuts and cheese provide depth of flavor, making the cutlets surprisingly juicy. This dish is perfect for a cozy family dinner or a festive table where you can impress guests with an original recipe. Chop nuts, 3-4 pinches of breadcrumbs, onion, hard cheese, and egg (the egg can be added directly to the filling if desired) using a blender. Mix everything well.
- Walnuts: 3 pieces
- Breadcrumbs: 200 g
- Onion: 0.5 piece
- Hard cheese: 20 g
- Chicken egg: 1 piece

We add the resulting mixture to the minced meat. We salt and pepper it. We mix everything well.
- Minced meat: 500 g
- Salt: to taste
- Ground black pepper: to taste

Cover the container with minced meat with a lid and place it in the refrigerator for 15-20 minutes.

Meanwhile, we prepare a tray and sprinkle it with breadcrumbs. This will make it faster and easier to coat the small patties.

After 15-20 minutes, we take the container with minced meat out of the refrigerator. We lightly grease our hands with vegetable oil and start shaping our cutlets.
- Sunflower oil: 250 ml

In some patties, I added small strips of hard cheese for experimentation. But this is not mandatory, as the minced meat already contains ground hard cheese that will add extra juiciness to the patties.
- Hard cheese: 20 g

We place the pot on the stove and pour in a layer of vegetable oil 6-7 cm high.
- Sunflower oil: 250 ml

We coat all the patties in breadcrumbs.
- Breadcrumbs: 200 g

We add a small piece of butter to get a golden crust on our cutlets.
- Butter: 10 g

We fry a few pieces in boiling oil for about three minutes.

We take out the cutlets onto a plate using any spoon or slotted ladle.
