Cut the potato almost through crosswise (leave an inch), with cuts about 0.5 cm wide. Slice the butter into thin slices of 2-3 mm and place them in some of the slits in the potato. Aim for about 4-6 strips of butter.

Line a baking tray with parchment, add the potatoes, and bake for about an hour at 180 degrees. Meanwhile, cut the bacon into small squares. Sausages, meat, or chicken can also be used.

Fry the bacon in a pan on both sides until crispy. Transfer to a paper towel to absorb excess fat.

Prepare the cheese by slicing it into 2-4 mm thick pieces (choose not too soft cheese, we need it to melt, not run on hot potatoes). Cheddar and its analogs work well.

About 30 minutes into baking — take out the potatoes and brush the cuts with oil again, either in the same cuts (they will be slightly opened) or in new ones. This will make the potatoes more tender and crispy; don't worry — excess fat will drip onto the baking tray. Put the potatoes back.

In about an hour (total baking time), the potatoes are ready.

Take it out, place 3-5 pieces of cheese on the potato. Return to the oven just until the cheese starts to melt slightly. It will continue cooking from the heat of the potato.
