Friggione is a traditional dish of European cuisine with deep roots in rural life. It originated as a simple yet hearty meal accessible to everyone. Clean the onion, slice it thinly, sprinkle with sugar and salt, and let it marinate for two to four hours. Cover the container in which the onion will marinate.
- Onion: 4 kg
- Sugar: 1 teaspoon
- Salt: 1 teaspoon

After some time, transfer the onion (with the juice it releases) to a large pot and add pork fat. Simmer everything on low heat, stirring occasionally until the onion becomes soft (note! the onion should not brown). If the onion starts to burn, you can add a little water.

Add chopped tomatoes and continue to simmer on low heat for two hours, stirring frequently.
