Originally, Scottish eggs were made with chicken eggs wrapped in minced meat, but the variation with quail eggs adds sophistication and tenderness to the dish. We put quail eggs to boil and start kneading the filling.
- Quail egg: 18 pieces
- Mixed mince: 700 g

We add seasoning, a little salt, and pepper from the grinder to the minced meat (you can use only beef). You can also add one or two chicken eggs to the minced meat for better 'binding'. We mix the minced meat well. We make a small patty from the minced meat, place a peeled egg inside, and wrap it tightly (as in the photo). We cut the leek into half rings.

Sauté the leeks in thyme oil and remove them from the pan.

We take a large skillet. Pour in teriyaki sauce, add oregano and lemon balm. Then add a little water. And put it on the fire. When it boils, taste it and adjust to your liking (salt, sugar). You can also add some dry spices like Maggi or just diluted starch. When the sauce is ready, add the meat eggs. Lower the heat and simmer for 10-15 minutes.
