We buy 2 kg of fresh squid, frozen large ones are fine too, but fresh is better and tastier.
- Squid: 2 kg

We thoroughly rinse the squid and clean them from the insides and outer membrane. For this, we place the squid in a deep pot and pour boiling water over them; the membrane will come off more easily. We clean the squid with a knife, removing the outer membrane and everything inside so that we have a perfectly clean white squid. Sometimes there are surprises inside the squid, like small fish. This is normal; squids also want to eat, and the fish can be fed to cats.

We rinse the cleaned squid again with warm water and cut them into strips.

Pour olive oil into a heated pan and add the squid to simmer, seasoning with salt and pepper, then cover with a lid. Simmer for 25 minutes, adding a little water and oil as needed.
- Squid: 2 kg

When the squid starts to curl a bit, add the coarsely chopped carrot and finely chopped onion. Simmer for another 10-15 minutes.
- Carrot: 1 piece

Once the carrots, onions, and squid are completely softened, add cream and herbs and simmer for another 7 minutes.
- Cream 20%: 250 ml
- Basil: to taste
- Parsley: 1 bunch

5 minutes before it's ready, add a bay leaf and a little fresh lemon juice. Done! Enjoy your meal.
